Grape-picking
Grape-picking is done strictly by hand
WINE-MAKING PROCESS
Pressing of the harvest in whole bunches by pneumatic presses.
Alcoholic and malolactic fermentation in thermo-regulated stainless steel vats.
Wine blended using several years’ harvest.
Aged for at least 24 months on racks after bottling.
Dosage after disgorging 9g/l for the Brut, 33g/l for the Demi-Sec.
Bottles marketed 12 weeks minimum after disgorging.
Best served chilled but not iced, i.e. 7°c.
